Preparation Procedure
Mango Mousse
- Allow gelatine to soak with 1/3 of mango and bloom for 5 minutes.
- Bring the remaining 2/3 of mango and castor sugar to a boil.
- Mix all the mixture and blend until smooth puree.
Butterfly Pea Rice
- Wash and rinse glutinous rice.
- Cook glutinous rice with unsweetened coconut milk, sugar, butterfly pea flower and salt until tender.
Coconut Sauce
- Cook coconut milk and corn flour on low heat until thickens.
