Preparation Procedure

Mango Mousse              

  1. Allow gelatine to soak with 1/3 of mango and bloom for 5 minutes.
  2. Bring the remaining 2/3 of mango and castor sugar to a boil.
  3. Mix all the mixture and blend until smooth puree.

 

Butterfly Pea Rice       

  1. Wash and rinse glutinous rice.
  2. Cook glutinous rice with unsweetened coconut milk, sugar, butterfly pea flower and salt until tender.

              

Coconut Sauce            

  1. Cook coconut milk and corn flour on low heat until thickens.
