4.Kunafa Berries Cheese Tart

Preparation Procedure

Kunafa Tart Shell

Procedure:

  1. Defrost kunafa dough in ambient environment for 1-2 hours.
  2. Weight all the ingredients.
  3. Melt the unsalted butter with microwave for 30 seconds, until it turns into liquid.
  4. Incorporate the melted butter liquid into kunafa dough and combine evenly until it turns to golden yellow colour.
  5. Shape 20g of kunafa dough into 3cm depth tart mould and left the middle part empty.
  6. Bake the kunafa tart shell at 180°C for 20 minutes.

Remove the kunafa tart shell from the oven. Let it cool, then store it in airtight container.

Berries Jam

Procedure:

  1. Weigh all the ingredients.
  2. In the Thermomix, select the traditional fruit jam program.
  3. Add all the ingredients and start the process.
  4. Check the consistency of the fruit jam once it’s ready.
  5. Pour the fruit jam out of the Thermomix.
  6. Let it cool, then store it in a glass jar.

Berries Cream Cheese

Procedure:

  1. Weigh all the ingredients.
  2. Soften the cream cheese using a hot water bath.
  3. Dissolve the gelatine powder in milk using a hot water bath.
  4. In a bowl, combine the softened cream cheese, sugar, and whipping cream with a spatula until no lumps remain.
  5. Add the gelatine-milk solution to the cream cheese mixture and mix well.
  6. Portion out some of the cream cheese mixture into a piping bag for later use.
  7. Add the berries jam to the remaining cream cheese mixture and mix until well combined.
  8. Transfer the berries cream cheese mixture into a piping bag, ready for use.

Kunafa Berries Cheese Tart

Procedure:

  1. Prepare 1 piece of kunafa tart shell.
  2. Pipe 15g of the original cream cheese mixture into the kunafa tart shell as the base layer.
  3. Let it set in the chiller for 30 minutes.
  4. Pipe 20g of the berries cream cheese mixture on top to fill the tart.
  5. Chill for 1 hour.
  6. Once set, top with fresh berries.
  7. The kunafa berries cheese tart is ready to serve.
