What is the carrier used in freeze dried, spray dried and drum dried vegetable/fruit powder?

ANSWER

Maltodextrin has been used by the manufacturers as carrier agents in powder drying process. The advantages of using Maltodextrin as carriers includes:-

i. Low cost of material.

ii. Improves powder stability.

iii. Produces the larger particles.

iv. Reduces powder hygroscopicity.

v. Heightens the moisture content in the powder.

vi. Increases the bulk density in the powder due to its stickiness.
