Question

What ingredient can be added into a puree/drink to achieve a safe shelf life of up to 12 months?

ANSWER

Ascorbic Acid as Antioxidant

Autoxidation causes food and beverage spoilage and leads to discoloration, as well as the formation of off-flavours and odours.  The resulting vitamin loss results in shortened shelf life and loss in nutritional value. This condition can be improved by adding antioxidants for extending shelf life.

Ascorbic acid is a water soluble antioxidant which plays an important role as a food additive and it is used extensively in the food industry (U.S. Patent No. US 3718482 A, 1973; El-Samragy, 2012).

Example of Fruit Beverage

Plum Banana, Strawberry and Raspberry Organic Fruit Blend for Baby

Ingredients: Organic fruit purees 79% (banana 40%, apple 30%, strawberry 5%, raspberry 4%), Water, Organic quinoa flakes 2%, Organic lemon juice concentrate, Antioxidant (ascorbic acid).
