Question

What are some sugar substitutes that can be added into yogurt to be recommended to people with diabetes?

ANSWER

There are a few non-nutritive sweeteners that can be added into yoghurt drinks which may be suitable for people with diabetes.

Stevia sweetener is a natural, zero-calorie source of sweetness. It is commonly composed of highly purified steviol glycosides which have no effect on blood sugar levels (Cabot & Jasinska, 2011). It is 200 – 300 times sweeter than sugar. Rebiana is the sweetest component of the stevia plant. It is heat-stable, making it suitable for yogurt processing by allowing it to be added to the yogurt base before heat treatment (Chandan & Kilara, 2013).

Aspartame is another low calorie option. Aspartame is made up of two amino acids called aspartic acid and the methyl ester of phenylalanine. It is 180 to 200 times sweeter than sugar but has no effect on blood glucose levels. However, for better results, it is recommended to not process Aspartame above 96°C for more than 5 minutes (Chandan & Kilara, 2013).
