According to Foods to Which Vitamins, Mineral Nutrients and Amino Acids May or Must be Added [D.03.002,FDR] and Grain and Bakery Products (B.13.001) of Food and Drug Regulations, the condition for mandatory and voluntary vitamins and minerals for flour are as following:

Food Vitamin, Mineral Nutrient Conditions
Flour, White Flour, Enriched Flour or Enriched White Flour Mandatory
Thiamine Shall contain in 100 grams of flour:

  • 0.64 milligram of thiamine
Riboflavin Shall contain in 100 grams of flour:

  • 0.40 milligram of riboflavin
Niacin Shall contain in 100 grams of flour:

  • 5.30 milligrams of niacin or niacinamide
Folic acid Shall contain in 100 grams of flour:

  • 0.15 milligram of folic acid
Iron Shall contain in 100 grams of flour:

  • 4.4 milligrams of iron
Voluntary
Vitamin B6 In 100 grams of flour:

  • 0.31 milligram of vitamin B6
dpantothenic acid In 100 grams of flour:

  • 1.3 milligrams of d-pantothenic acid
Calcium
  • Monocalcium phosphate in an amount not exceeding 7,500 parts by weight for each one million parts of flour
  • May contain calcium carbonate, edible bone meal, chalk (B.P.), ground limestone or calcium sulphate in an amount that will provide in 100 grams of flour 140 milligrams of calcium.
Magnesium In 100 grams of flour:

  • 190 milligrams of magnesium
