Preparation Procedure

Cookie

  1. Mix unsalted butter, brown sugar, and caster sugar.
  2. Add in whole egg, egg yolk, vanilla extract and mix evenly.
  3. Add in baking soda, plain flour and the wet dough and knead till the dough has been formed.
  4. Chill in chiller for 15 minutes.
  5. Roll the dough into 1cm thickness. Cut into 5cm diameter.
  6. Place it on top of cooked croissant. Bake at 180°C for 12 minutes.

 

Strawberry Cream Cheese

  1. Boil IQF strawberry fruits, caster sugar and honey for 5 minutes.
  2. Blend until a smooth paste has been formed. Leave to cool.
  3. Beat cream cheese until soft.
  4. Mix in IQF strawberry puree until fully combined.

 

Sesame Fufann Paste

  1. Mix whipping cream, sesame fufann paste and icing sugar and whipped for 7 minutes.
