Sucralose is an artificial sweetener often used in beverage compositions. In a water solution, sucralose is about 600 times sweeter than sugar and possesses a clean taste profile. It has taste characteristics very similar to sugar and is extremely stable to heat and acid media.

The Acceptable Daily Intake (ADI) for sucralose was set at 0 – 15 mg/kg body weight by JECFA in 1990 and by the Scientific Committee on Food (2000). By referring to General Standard for Food Additives (Codex Stan 192– 1995) and Food Act No. 26 of 1980, the limit of sucralose in beverages is 300 mg/kg (max) and 300 mg/L (max) respectively. According to U.S. Patent No. 20110200712 A1 (2011), in low-calorie drink compositions, sucralose is present in an amount of 16 to 26mg on a dry weight basis per 1000ml of the drink composition.
