Preparation Procedure

Cromboloni Base

  1. Mix all ingredients together and form a dough.
  2. Proof the dough for 3 to 4 hours or until double.
  3. Flatten the dough and place a butter sheet on top of the dough.
  4. Fold the dough into a rectangular shape. Give two turns and allow to rest for 15 minutes, then give a final third turn. Allow to rest again before shaping into croissants.
  5. To shape, pin out the dough to a thickness of 2-3mm and cut into 12 x 7 -8cm triangles. Roll up each triangle, starting at the base, and curl the ends round to form a crescent.
  6. Place on a baking tray with the ring cutter. Cover with a cloth and prove for 1 hour in a warm place. Wash with beaten egg before baking.
  7. Bake for 15 minutes at 220 oC.

 

Toppings

a) IQF Fruits

  1. Cook IQF strawberry and sugar in a pot until it boils.
  2. Blend it into a paste.
  3. Leave it to chill.
  4. Beat cream cheese until soften, mix in strawberry mixture and beat till fully combined.

 

b) Fufann® Paste®

  1. Beat fufann paste and icing sugar together for 2 minutes until full combine.
  2. Add in Debic whipping cream and continue to beat under medium speed for 3 minutes or until medium peak has been formed.
  3. Decorate on Cromboloni.

 

c) Ovomaltine®

  1. Double boiled Ovomaltine.
  2. Spread the Ovomaltine on top of Cromboloni.

 

d) Foodcraft® Sambal

  1. Reheat Foodcraft Sambal and spread on Crombolini.
